Egg Mayonnaise (Mayonnaise d'Oeufs)
Ingredients
- 5 hard-boiled eggs
- 1/4 finely shredded lettuce
- 6 3/4 floz mayonnaise
- 5 fillets of anchovy
- 10 capers
- 5 stoned olives
- 5 cucumber slices
- 2 to matoes either sliced or in wedges
Instructions
- Cut the eggs into halves or quarters lengthways and place round side upwards on the shredded lettuce.
- Coat with the mayonnaise and decorate with thin strips of anchovies trellis-fashion, capers, olives, cucumber and tomato.
