Potato and Egg Mayonnaise
Ingredients
- 4 large potatoes boiled and sliced
- 4 medium eggs hard boiled (cooked) and shelled
- 1 medium onion finely sliced
- 1/4 pt mayonnaise
- Sprigs of parsley to garnish
Instructions
- Arrange the potato slices in a suitable serving dish.
- Quarter the eggs and place on top of the potatoes.
- Scatter the onion slices over, dress with mayonnaise and garnish with parsley.
