  • 1 whole egg
  • 1/4 tsp spoon dry English mustard
  • 1/2 tsp salt
  • 2 tbsp red or white wine or tarragon vinegar or lemon juice
  • 1/4 pint olive corn or nut oil


  • Put the egg, mustard, salt and vinegar or lemon juice into the blender and blend until well mixed.
  • With the blender still on, add the oil slowly through the hole in the lid, drop by drop at first, gradually increasing the addition of the oil until the mayonnaise begins to thicken.
