
Chicken Risotto Milanese
Chicken Risotto Milanese is a one-pot meal bursting with rich Italian flavor.
Ingredients
- 4 1/2 oz butter
- 2 lb chicken meat sliced thinly
- 1 large onion chopped
- 1 lb 2 oz risotto rice
- 1 pint chicken stock
- 1/4 pint white wine
- 1 tsp crumbled saffron
- salt and pepper
- 2 oz grated Parmesan cheese to serve
Instructions
- Heat 60 g (2 oz) 4 tbsp of butter in a deep frying pan (skillet), and fry the chicken and onion until golden brown.
- Add the rice, stir well, and cook for 15 minutes.
- Heat the stock until boiling and gradually add to the rice. Add the white wine, saffron, salt and pepper to taste and mix well. Simmer gently for 20 minutes, stirring occasionally, and adding more stock if the risotto becomes too dry.
- Leave to stand for 2 - 3 minutes and just before serving, add a little more stock and simmer for 10 minutes. Serve the risotto, sprinkled with the grated Parmesan cheese and the remaining butter.
