  • 2 lb cherries
  • 6 day-old bread rolls
  • 1 1/4 pints lukewarm milk
  • 4 eggs
  • 4 oz sugar
  • 1 teaspoon cinnamon
  • 2 oz chopped almonds
  • pinch of salt
  • 2 oz butter
  • 2 tablespoons icing sugar


  • Wash, dry, destalk and stone the cherries. Cut the rolls into cubes and soften them thoroughly in the milk. Grease a baking dish with butter.
  • Separate the eggs. Beat the yolks with the sugar and cinnamon and stir the mixture into the bread, together with the cherries and almonds.
  • Whisk the egg whites with the salt until stiff, fold into the mixture and transfer to the baking dish.
  • Dot with butter and bake on the second shelf from the bottom of a moderately hot oven (200c, 400f, gas 6) for 40-50 minutes.
  • Dust the pudding with icing sugar before serving.
