Candied Sweet Potatoes
Ingredients
- 1 1/2 lb sweet potatoes
- 3 floz lime juice
- 8 floz golden syrup substitute light corn syrup
- 1 cup dark brown sugar
- 12 floz hot water
Instructions
- Use small potatoes for this recipe
- Peel and divide potatoes into four lengthwise, then blanch in boiling water for about 12 minutes.
- Drain, pat dry and place in a deep-sided roasting tin.
- Make a syrup by blending all the other ingredients together.
- Pour over the potatoes and bake in the oven Gas mark 5, 375°F (190°C) until golden brown and candied.
- Baste several times during cooking.
