  • 4 floz salad oil
  • finely grated rind and juice of 1 lemon
  • 1/2 tsp caster sugar
  • salt and freshly ground pepper
  • 6 oz green pepper seeded and thinly sliced
  • 2 crisp green eating apples cored and thinly sliced
  • 2 bunches watercress trimmed


  • Put the oil, lemon rind and juice, sugar and seasonings into a bowl and mix well. Add the green pepper and apple and toss.
  • Just before serving add the watercress and turn until lightly glistening.
