Watercress, Sweet Pepper and Apple Salad
Ingredients
- 4 floz salad oil
- finely grated rind and juice of 1 lemon
- 1/2 tsp caster sugar
- salt and freshly ground pepper
- 6 oz green pepper seeded and thinly sliced
- 2 crisp green eating apples cored and thinly sliced
- 2 bunches watercress trimmed
Instructions
- Put the oil, lemon rind and juice, sugar and seasonings into a bowl and mix well. Add the green pepper and apple and toss.
- Just before serving add the watercress and turn until lightly glistening.
