Tomato and Basil Crostini
Ingredients
- 3 garlic cloves
- 2 tbsp extra-virgin olive oil plus extra for drizzling
- 1.1 lb ripe tomatoes roughly chopped
- 8 ciabatta bread slices
- 2 tbsp shredded fresh basil
Instructions
- In a large bowl, stir one crushed garlic clove and 2 tablespoons of the olive oil into the tomatoes. Season well and allow to stand for 10 minutes.
- Lightly toast the ciabatta slices on both sides, halve the remaining garlic cloves, then rub both sides of the toast with the cut side of the garlic and drizzle with a little olive oil. Add the basil to the tomato mixture and spoon it on top of the ciabatta, then serve.
