Sparkling Prawns
Ingredients
- Juice and grated rind of half an orange
- 1 tbsp green peppercorns in brine rinsed
- 1/4 pint sparkling dry white wine
- Salt and pepper
- 1 1/2 lbs peeled prawns
- 1/4 pint double cream
Instructions
- Put orange rind and juice, peppercorns, wine and seasoning into a bowl. Heat for 30 seconds on HIGH.
- Stir in the prawns and heat for 1 minute on HIGH.
- Lightly whip the cream, fold in, and heat for a further 1 minute on HIGH.
- Adjust seasoning before putting into serving dishes. Garnish with the orange slices.
