  • Juice and grated rind of half an orange
  • 1 tbsp green peppercorns in brine rinsed
  • 1/4 pint sparkling dry white wine
  • Salt and pepper
  • 1 1/2 lbs peeled prawns
  • 1/4 pint double cream


  • Put orange rind and juice, peppercorns, wine and seasoning into a bowl. Heat for 30 seconds on HIGH.
  • Stir in the prawns and heat for 1 minute on HIGH.
  • Lightly whip the cream, fold in, and heat for a further 1 minute on HIGH.
  • Adjust seasoning before putting into serving dishes. Garnish with the orange slices.
