  • 1 lb raw prawns peeled
  • 1 tbsp spice seasoning
  • 1 oz butter or margarine
  • 1 tbsp olive oil
  • 2 shallots finely chopped
  • 1 garlic clove crushed
  • 12 oz okra topped, tailed and cut into 2.5 cm (1 in) lengths
  • 1 tsp curry powder
  • 2 tsp shrimp paste
  • 1 tbsp chopped fresh coriander
  • 1 tbsp lemon juice
  • 6 oz prepared saltfish shredded


  • Season the prawns with the spice seasoning and leave to marinate in a cool place for about 1 hour.
  • Heat the butter or margarine and olive oil in a large frying pan or wok over a moderate heat and stir-fry the shallots and garlic for 5 minutes. Add the okra, curry powder and shrimp paste, stir well and cook for about 10 minutes, until the okra is tender.
  • Add 30 ml (2 tbsp) water, coriander, lemon juice, prawns and saltfish, and cook gently for 5 - 10 minutes.
  • Adjust the seasoning and serve hot.
  • Cook's Tip : Soak the saltfish for 12 hours, changing the water two or three times. Rinse, bring to the boil in fresh water, then cool.
