
Curried Prawns and Saltfish
Ingredients
- 1 lb raw prawns peeled
- 1 tbsp spice seasoning
- 1 oz butter or margarine
- 1 tbsp olive oil
- 2 shallots finely chopped
- 1 garlic clove crushed
- 12 oz okra topped, tailed and cut into 2.5 cm (1 in) lengths
- 1 tsp curry powder
- 2 tsp shrimp paste
- 1 tbsp chopped fresh coriander
- 1 tbsp lemon juice
- 6 oz prepared saltfish shredded
Instructions
- Season the prawns with the spice seasoning and leave to marinate in a cool place for about 1 hour.
- Heat the butter or margarine and olive oil in a large frying pan or wok over a moderate heat and stir-fry the shallots and garlic for 5 minutes. Add the okra, curry powder and shrimp paste, stir well and cook for about 10 minutes, until the okra is tender.
- Add 30 ml (2 tbsp) water, coriander, lemon juice, prawns and saltfish, and cook gently for 5 - 10 minutes.
- Adjust the seasoning and serve hot.
- Cook's Tip : Soak the saltfish for 12 hours, changing the water two or three times. Rinse, bring to the boil in fresh water, then cool.
