
Prawns with almonds
This is a delicately flavored dish of prawns with almonds. Garnished with spring onion flowers and serving hot.
Ingredients
- 3 oz blanched almonds
- 12 oz peeled cooked prawns
- 2 teaspoons cornflour
- 1 teaspoon finely chopped fresh root ginger
- 1 small garlic clove crushed
- 2 tablespoons oil
- 1 celery stick finely chopped
- 2 teaspoons soy sauce
- 2 teaspoons dry sherry
- 2 tablespoons water
- pepper
- spring onion flowers to garnish
Instructions
- Brush a frying pan lightly with oil, add the almonds, then heat and toss until golden; be careful not to let them burn. Drain on absorbent kitchen paper.
- Put the prawns in a basin with the cornflour, ginger and garlic and mix well.
- Heat the oil in the frying pan, add the prawn mixture and celery and stir-fry for 2-3 minutes. Add the soy sauce, sherry, water and pepper, and bring to the boil.
- Add the toasted almonds and heat for 30 seconds, stirring.
- Garnish with spring onion flowers and serve hot.
- Serve a stir-fried vegetable such as Stir-fried Chinese Leaves with this dish. Noodles or plain boiled rice would also make suitable accompaniments.
