Chinese Steak with Peppe
Ingredients
- 2 oz Butter
- 1 Garlic clove crushed
- Salt and pepper to taste
- 1 lb Topside top round of beef, cut 2 1/2 cm (1 in) thick then into strips
- 4 Tbs Soy sauce
- 2 tsp Sugar
- 6 oz Bean sprouts
- 2 Tomatoes blanched, peeled and quartered
- 2 Green peppers pith and seeds removed and thinly sliced
- 1/2 Tbs Cornflour cornstarch, blended with 2 Tbs water
- 4 Spring onions scallions, sliced
Instructions
- Melt the butter in a large frying-pan. Add the garlic, salt and pepper and stir-fry for 30 seconds.
- Add the beef strips and stir-fry for 3 minutes. Increase the heat to high.
- Stir in the soy sauce and sugar, cover and cook for 5 minutes.
- Uncover, and stir in the bean sprouts, tomatoes and peppers. Re-cover and simmer for 5 minutes.
- Stir in the cornflour (cornstarch) mixture until the mixture thickens.
- Transfer the mixture to a warmed serving dish and sprinkle over the spring onions (scallions). Serve at once.
