Souffled Cheese Tartlets
Ingredients
- 2 1/2 oz English butter
- 4 1/2 oz flour
- 1/4 pint milk
- 3 oz English Cheddar cheese grated
- 1 egg separated
- salt and freshly ground pepper
Instructions
- In a bowl, rub 50 g (2 oz) butter into 100 g (4 oz) flour until the mixture resembles fine breadcrumbs.
- Bind to a dough with a little cold water. Roll out on a floured surface and use to line twelve 5 cm (2 inch) patty tins.
- Melt the remaining 15 g (1/2 oz) butter in a pan, stir in the remaining flour and cook gently for 1 minute, stirring.
- Remove the pan from the heat and gradually stir in the milk.
- Bring to the boil and continue to cook, stirring, until the sauce thickens, then add the cheese, egg yolk and seasonings.
- Whisk the egg white until stiff and fold into the mixture.
- Spoon into the patty cases and bake in the oven at 200°C (400°F) mark 6 for 20-25 minutes until risen and golden.
- Serve immediately.
