Blue Cheese Rarebits
This recipe is great for serving as a party appetizer. The best part? It's one of the easier recipes you'll find.
Ingredients
- 4 oz danish blue cheese grated
- 3 tbsp white wine
- 4 egg yolks beaten
- 3 tbsp milk
- salt and freshly ground black pepper
- 8 small slices rye bread toasted
Instructions
- Put the cheese into a small heavy based pan. Add the wine and stir over a low heat until the cheese has melted. Remove from the heat. Add the egg yolks to the milk and gradually stir into the cheese. Beat in the seasoning. Return to the heat and cook gently, stirring all the time until the mixture thickens.
- Adjust the seasoning and spoon on to the slices of toast, pop under a hot grill to glaze golden brown. Serve as soon as possible.
