  • 6 3/4 floz olive oil
  • a good pinch of salt
  • 1/2 floz mild vinegar
  • 1/4 tsp dried thyme optional
  • 2 oz blue cheese


  • Put the oil, salt, and vinegar in a bowl or in the goblet of an electric blender.
  • Crush the thyme if required, and crumble the cheese.
  • Add to the other ingredients, and whisk or blend until smooth.
