Quick-Fried Sliced Beef in Oyster Sauce

  • 1 1/2 lb Fillet steak cut into thin strips about 5 cm (2 in x 2 1/2 (1 in)
  • Salt and white pepper to taste
  • 1/4 tsp Ground ginger
  • 1 Tbs Cornflour cornstarch
  • 1 Tbs Soy sauce
  • 2 1/2 Tbs Oyster sauce
  • 1 tsp Sugar
  • 2 Tbs Rice wine or dry sherry
  • 3 floz Vegetable oil
  • 1 Medium onion thinly sliced
  • 1 Garlic clove crushed


  • Rub the beef strips with the salt, pepper, ginger and cornflour (cornstarch).
  • Combine the soy sauce, oyster sauce, sugar and wine or sherry. Set aside.
  • Heat the oil in a large frying-pan. Add the onion and garlic and fry for 30 seconds, stirring constantly. Add the beef strips and fry for 2 minutes, stirring constantly. Pour off all but a thin film of oil from the pan. Pour in the reserved sauce and cook for a further 1 1/2 minutes, stirring constantly.
  • Transfer the mixture to a warmed serving dish and serve at once.
