Quick-Fried Spinach with Shredded Pork
Ingredients
- 3 Tbs Vegetable oil
- 8 oz Soy sauce
- 2 Tbs Pork fillet tenderloin, cut into thin strips
- 1 Tbs Rice wine or dry sherry
- 1 tsp Sugar
- 1/2 tsp Black pepper
- 1 1/2 oz Vegetable fat
- 1 lb Spinach trimmed and chopped
- 1 tsp Salt
Instructions
- Heat the oil in a large saucepan. Add the pork strips and stir-fry for 2 minutes. Add the soy sauce, wine or sherry, sugar and pepper and stir-fry for a further 2 minutes. Using a slotted spoon, transfer the pork to a plate and keep hot.
- Add 25 g (1 oz) (2 tablespoons) of fat to the pan and melt it. Add the spinach and salt and stir-fry for 3 minutes. Add the remaining fat to the pan and stir-fry the mixture for a further 30 seconds. Using the slotted spoon, transfer the spinach to a warmed serving dish.
- Increase the heat to moderately high and return the pork strips to the pan. Stir-fry for 30 seconds to reheat them thoroughly. Pour the pork and pan juices over the spinach and serve at once.
