Oyster Soup
Ingredients
- 3 large potatoes peeled
- 1 3/4 pint boiling milk
- bouquet garni
- good grinding of pepper
- 36 fresh oysters
- 6 oz belly of pork
- 1 tsp salt
- 2 oz butter
Instructions
- Cook the potatoes in boiling salted water until tender.
- Drain, then mash and add the milk, bouquet garni and season to taste.
- In the meantime, open the oysters and reserve their juices.
- Dice the belly of pork and fry gently until just cooked.
- Add the pork, oysters and their juices to the potatoes and milk and bring almost to boiling point.
- Gently simmer for 5 minutes, add the butter and serve.
