  • 3 large potatoes peeled
  • 1 3/4 pint boiling milk
  • bouquet garni
  • good grinding of pepper
  • 36 fresh oysters
  • 6 oz belly of pork
  • 1 tsp salt
  • 2 oz butter


  • Cook the potatoes in boiling salted water until tender.
  • Drain, then mash and add the milk, bouquet garni and season to taste.
  • In the meantime, open the oysters and reserve their juices.
  • Dice the belly of pork and fry gently until just cooked.
  • Add the pork, oysters and their juices to the potatoes and milk and bring almost to boiling point.
  • Gently simmer for 5 minutes, add the butter and serve.
