  • 2 lb small new potatoes
  • 2 oz butter
  • 32 floz milk
  • 3 tbsp fresh mint
  • 1 tbsp fresh parsley
  • Salt and pepper to taste


  • Wash the potatoes but do not peel.
  • Melt the butter in a large saucepan.
  • Add potatoes and stir to coat with the butter.
  • Pour in the milk, add the herbs and season to taste.
  • Bring to a gentle simmer and cook for 20 minutes, or until the potatoes are tender, topping up with milk if necessary.
  • Serve piping hot and garnish with croutons.
