Minted Potato Soup with Croutons
Ingredients
- 2 lb small new potatoes
- 2 oz butter
- 32 floz milk
- 3 tbsp fresh mint
- 1 tbsp fresh parsley
- Salt and pepper to taste
Instructions
- Wash the potatoes but do not peel.
- Melt the butter in a large saucepan.
- Add potatoes and stir to coat with the butter.
- Pour in the milk, add the herbs and season to taste.
- Bring to a gentle simmer and cook for 20 minutes, or until the potatoes are tender, topping up with milk if necessary.
- Serve piping hot and garnish with croutons.
