Potato, French Bean and Tomato Salad (Salade Nicoise)
Ingredients
- 1 Small lettuce separated into leaves
- 6 Medium cold cooked potatoes diced
- 10 oz Cold cooked French beans cut into lengths
- 6 Tomatoes blanched, peeled and quartered
- 2 Garlic cloves crushed
- 6 Anchovy fillets halved
- 10 Black olives stoned
- 2 Tbs Capers
for the dressing
- 2 floz Olive oil
- 2 Tbs Wine vinegar
- 1 tsp French mustard
Instructions
- Arrange the lettuce leaves in a large salad bowl. Put the potatoes, beans, tomatoes and garlic into the centre of the bowl.
- Combine all the ingredients for the dressing together, then pour over the vegetables. Garnish with the anchovies, olives and capers.
