  • 1 Small lettuce separated into leaves
  • 6 Medium cold cooked potatoes diced
  • 10 oz Cold cooked French beans cut into lengths
  • 6 Tomatoes blanched, peeled and quartered
  • 2 Garlic cloves crushed
  • 6 Anchovy fillets halved
  • 10 Black olives stoned
  • 2 Tbs Capers

for the dressing

  • 2 floz Olive oil
  • 2 Tbs Wine vinegar
  • 1 tsp French mustard


  • Arrange the lettuce leaves in a large salad bowl. Put the potatoes, beans, tomatoes and garlic into the centre of the bowl.
  • Combine all the ingredients for the dressing together, then pour over the vegetables. Garnish with the anchovies, olives and capers.
