  • 8 3/4 oz bean sprouts
  • 3 1/2 oz Chinese leaves
  • 2 sticks celery
  • 1 small orange
  • 3 tbsp French dressing or vinaigrette sauce
  • salt and pepper


  • Pick over the bean sprouts, wash well, and dry thoroughly.
  • Shred the Chinese leaves and chop the celery finely.
  • Peel the orange, discarding all the white pith.
  • Cut into slices, then cut each slice across into quarters.
  • Put the sprouts, cabbage, celery, and orange into a bowl.
  • Pour the dressing over the salad and toss lightly. Season to taste.
