
Broccoli Gratin
Ingredients
- 2 lb broccoli florets
- 2 oz butter
- 2 onions chopped
- 2 oz plain flour
- 1 pt milk
- 8 oz mozzarella cheese cubed
- 4 oz blue cheese crumbled
- 2 red peppers halved, seeded and sliced
- salt and pepper
- 4 oz Cheddar cheese grated
Instructions
- Preheat oven 200°C/400°F/gas 6. Put broccoli in a pan of lightly salted boiling water and cook until just tender, about 10 mins.
- Meanwhile, melt butter in a saucepan, add onion and cook for 3 - 4 mins until softened
- Stir in flour, remove from heat and gradually add the milk, stirring until blended.
- Bring to the boil, stirring continuously until thickened. Stir in the mozzarella, blue cheese, red pepper and seasoning. Add broccoli and stir well to coat.
- Divide between four individual dishes, top with grated cheese and place in a preheated oven for 10 -15 mins.
- If you have a steamer, use it to cook the broccoli. Steamed vegetables have a better flavour and are more nutritious.
