  • 4 loin pork chops
  • salt and pepper

for the stuffing

  • 1 onion grated
  • grated rind of 1 orange
  • 2 oz cashew nuts chopped
  • 1 teaspoon sage
  • 1 teaspoon Dijon mustard
  • 2 oz fresh brown breadcrumbs
  • salt and pepper
  • 1 egg lightly beaten
  • 2 tablespoons oil


  • orange slices
  • parsley sprigs


  • Cut the rind and excess fat off the chops and season the chops with salt and pepper. Carefully cut each chop horizontally, leaving joined at the bone.
  • Mix together the onion, orange rind, cashew nuts, sage, mustard, breadcrumbs, seasoning and bind with the egg.
  • Place the stuffing inside the chops. Brush with the oil and cook under a medium grill for 8 - 10 minutes on each side or until the chops are golden and the stuffing is cooked. Serve garnished with orange slices and parsley sprigs.
  • For a change, substitute lemon rind and almonds for the orange rind and cashew nuts in this stuffing.
