
Pork Chops with Orange and Cashew Nut Stuffing
Ingredients
- 4 loin pork chops
- salt and pepper
for the stuffing
- 1 onion grated
- grated rind of 1 orange
- 2 oz cashew nuts chopped
- 1 teaspoon sage
- 1 teaspoon Dijon mustard
- 2 oz fresh brown breadcrumbs
- salt and pepper
- 1 egg lightly beaten
- 2 tablespoons oil
garnish
- orange slices
- parsley sprigs
Instructions
- Cut the rind and excess fat off the chops and season the chops with salt and pepper. Carefully cut each chop horizontally, leaving joined at the bone.
- Mix together the onion, orange rind, cashew nuts, sage, mustard, breadcrumbs, seasoning and bind with the egg.
- Place the stuffing inside the chops. Brush with the oil and cook under a medium grill for 8 - 10 minutes on each side or until the chops are golden and the stuffing is cooked. Serve garnished with orange slices and parsley sprigs.
- For a change, substitute lemon rind and almonds for the orange rind and cashew nuts in this stuffing.
