
Marinated and Barbecued pork chops
I have perfected this recipe for barbecued pork chops after years of cooking them. The meat is very tender and flavorful, and the sauce creates a perfect barbecue flavor.
Ingredients
- 4 Pork spare rib chops
For the Marinade
- 1 Large onion
- 2 tbsp Lemon juice or vinegar
- 2 tbsp Oil
- 1/2 tsp Powdered mustard
- 2 tsp Worcestershire sauce
- 1/2 tsp Salt
- 1/2 tsp Freshly ground black pepper
- 1 tsp Granulated sugar
- 1/2 tsp Paprika
Instructions
- Place pork chops in bowl. Peel and grate the onion and place in a jug. Add rest of marinade ingredients and mix well, then pour over chops. Leave to marinate for 1 hour in a cool place, turning chops at least twice. Preheat the grill.
- Cook the chops under the grill (or on a barbecue), occasionally brushing them with the reserved marinade. Serve with mixed salad, dressed with vinaigrette flavoured with fresh dill or other herb of choice.
