I have perfected this recipe for barbecued pork chops after years of cooking them. The meat is very tender and flavorful, and the sauce creates a perfect barbecue flavor.

Ingredients
 

  • 4 Pork spare rib chops

For the Marinade

  • 1 Large onion
  • 2 tbsp Lemon juice or vinegar
  • 2 tbsp Oil
  • 1/2 tsp Powdered mustard
  • 2 tsp Worcestershire sauce
  • 1/2 tsp Salt
  • 1/2 tsp Freshly ground black pepper
  • 1 tsp Granulated sugar
  • 1/2 tsp Paprika

Instructions

  • Place pork chops in bowl. Peel and grate the onion and place in a jug. Add rest of marinade ingredients and mix well, then pour over chops. Leave to marinate for 1 hour in a cool place, turning chops at least twice. Preheat the grill.
  • Cook the chops under the grill (or on a barbecue), occasionally brushing them with the reserved marinade. Serve with mixed salad, dressed with vinaigrette flavoured with fresh dill or other herb of choice.
