Minted Peas and Beans
Ingredients
- 1 lb shelled fresh peas
- 8 oz French beans
- 1 oz butter
- 1 bunch spring onions trimmed and thickly sliced
- 8 oz courgettes cut into wedges
- 7 floz creme fraiche
- 3 tbsp fresh mint roughly chopped
- 1 tsp sugar
Instructions
- Cook the peas and beans in a pan of boiling salted water for 5 minutes, or until tender, then drain.
- Heat the butter in a frying pan and saute the spring onions and courgettes. Add the creme fraiche and bring to the boil, then lower the heat and simmer for 2 minutes.
- Mix in the peas and beans, mint and sugar, then season with salt and black pepper, to serve.
