Ingredients
 

  • 1 lb shelled fresh peas
  • 8 oz French beans
  • 1 oz butter
  • 1 bunch spring onions trimmed and thickly sliced
  • 8 oz courgettes cut into wedges
  • 7 floz creme fraiche
  • 3 tbsp fresh mint roughly chopped
  • 1 tsp sugar

Instructions

  • Cook the peas and beans in a pan of boiling salted water for 5 minutes, or until tender, then drain.
  • Heat the butter in a frying pan and saute the spring onions and courgettes. Add the creme fraiche and bring to the boil, then lower the heat and simmer for 2 minutes.
  • Mix in the peas and beans, mint and sugar, then season with salt and black pepper, to serve.
