Swiss Style Potato Soup
Ingredients
- 1 large onion chopped
- 2 oz butter
- 1 lb potatoes peeled and diced
- 8 oz turnip peeled and diced
- 1/3 cup plain flour All purpose
- 1 pt boiling potato stock
- 1 pt milk very hot
- Good pinch mace or nutmeg
- Salt and pepper to taste
- 1 oz butter
Instructions
- Fry the chopped onion in butter until soft but not browned.
- Add the diced potatoes and turnip.
- Put in the flour and stir well.
- Slowly add the stock, milk and mace and season to taste.
- Bring to a simmer and cook gently for 20 minutes.
- Pass through a sieve or liquidise.
- Serve garnished with flakes of butter scattered on top.
