Lemon Yogurt Syllabub
Ingredients
- 3/4 pint thick yogurt
- 1 tablespoon clear honey
- grated rind of 1 lemon
- juice of 2 lemons
- 2 tablespoons dry sherry
- fresh fruit to decorate
Instructions
- Whisk the yogurt in a bowl, then beat in the honey and lemon rind. Gradually add the lemon juice and sherry, stirring all the time.
- Divide the mixture between four individual serving glasses This syllabub is particularly delicious if served topped with ; few fresh raspberries, strawberries or blackberries.
- Alternatively, decorate each glass with a thin slice of lemon and : sprig of mint. Serve chilled.
- Greek yogurt has quite a high fat content but you can make a yogurt of comparable consistency from skimmed long-life milk. This has already been heat-treated so it is not necessary to scald it before adding the culture. By adding skimmed milk powder to the milk you can make even thicker yogurt.
