Milk Lemon and Herb Stock
Stock for poaching fish; needs no preliminary cooking.
Ingredients
- 1/2 pint milk
- 1/2 pint water
- 2-3 lemons peeled and sliced
- 1 bouquet garni
Instructions
- Poach the fish in this mixture but do not allow it to boil.
- Transfer the fish to a heated serving dish and use the stock as required.
