Ingredients
 

  • 1/4 pint water
  • salt
  • 12 oz green cabbage shredded
  • 12 oz hard white cabbage shredded
  • 1/2 oz butter cut into small pieces
  • grated rind of 1 lemon
  • 1 1/2 teaspoons poppy seeds
  • freshly ground black pepper
  • 2 tablespoons smetana to serve (optional)

Instructions

  • Put the water into a large saucepan, add a little salt and bring to the boil. Add both green and white cabbage, cover and simmer steadily for 7-10 minutes. The cabbage should be crisply tender and most of the water absorbed.
  • Take the lid off the pan and boil quickly to reduce any remaining liquid. Add the pieces of butter, lemon rind, poppy seeds and lots of black pepper. Stir briefly until the butter is melted and the cabbage evenly coated.
  • Spoon the hot cabbage into a warm dish and serve with smetana spooned over the top, if liked.
  • The colour contrast of the green and white cabbage gives this simple vegetable dish an attractive appearance. It can be served with meat or poultry dishes.
