Herring Spread with Sour Cream
These herrings can be made with yogurt instead of sour cream if you want a lower-calorie version. Fresh herbs, such as parsley, chervil, or cor-iander, can also be added to the mixture.
Ingredients
- 4 herrings preferably with hard roe, soaked in water for 3 hours
- 2 cups sour cream
- 2 tablespoons mayonnaise
- 1 potato boiled and peeled
- 1/2 teaspoon black pepper
Instructions
- Drain the herrings and rinse with water. Fillet the fish, removing all bones.
- In a bowl, blend the roe with the sour cream and mayonnaise.
- Puree the potato in a food processor or blender and add the herrings. Blend well, then stir the herring mixture into the sour-cream mixture and season with pepper.
- Chill, covered, until ready to use, then serve as a spread for crackers or matzo.
