
Spicy Tomato Chicken
Ingredients
- 4 chicken breasts skinned and boned
- 4 tbsps chicken stock or water
- 1 lb canned tomatoes
- 2 tbsps Worcestershire sauce
- 1 clove garlic crushed
- 2 tbsps tomato puree
- 2 tbsps cider vinegar
- 1 oz light brown sugar or honey
- 1 small onion finely chopped
- 1 bay leaf
- Pinch allspice
- Salt and pepper
- 4 to matoes skinned, seeded and cut into thin strips to garnish
Instructions
- Place the chicken in one layer in a large casserole with the stock or water. Cover tightly and cook on MEDIUM for 10 minutes. Leave to stand, covered, for at least 5 minutes while preparing the sauce.
- Combine all the sauce ingredients with the cooking liquid from the chicken in a deep bowl.
- Cook, uncovered, for 7 minutes on HIGH, until the sauce reduces and thickens.
- Remove the bay leaf and blend the sauce in a food processor until smooth.
- Arrange the chicken breasts on a serving plate and coat with the sauce. Add the tomato strips and reheat for 30 seconds on HIGH before serving.
