  • 4 chicken breasts skinned and boned
  • 4 tbsps chicken stock or water
  • 1 lb canned tomatoes
  • 2 tbsps Worcestershire sauce
  • 1 clove garlic crushed
  • 2 tbsps tomato puree
  • 2 tbsps cider vinegar
  • 1 oz light brown sugar or honey
  • 1 small onion finely chopped
  • 1 bay leaf
  • Pinch allspice
  • Salt and pepper
  • 4 to matoes skinned, seeded and cut into thin strips to garnish


  • Place the chicken in one layer in a large casserole with the stock or water. Cover tightly and cook on MEDIUM for 10 minutes. Leave to stand, covered, for at least 5 minutes while preparing the sauce.
  • Combine all the sauce ingredients with the cooking liquid from the chicken in a deep bowl.
  • Cook, uncovered, for 7 minutes on HIGH, until the sauce reduces and thickens.
  • Remove the bay leaf and blend the sauce in a food processor until smooth.
  • Arrange the chicken breasts on a serving plate and coat with the sauce. Add the tomato strips and reheat for 30 seconds on HIGH before serving.
