Eggs with Sweet and Sour Sauce (Saure Eier mit Specksauce)

This German dish is made with eggs poached in a sweet and sour sauce. Serve with warm buttered rye bread for a well-balanced, hearty breakfast.

  • 1 oz finely chopped onion
  • 1 oz lardons of bacon
  • oil
  • 2 tbsp vinegar
  • 2 tbsp sugar
  • 3 tbsp jus lie
  • creme fraiche yogurt or cream
  • 2 soft-boiled eggs
  • blinis


  • Lightly fry 25 g each of finely chopped onion and lardons of bacon in oil.
  • Drain off the oil, moisten with 25 ml vinegar, add 25 g sugar and boil until reduced by half.
  • Moisten with 50 ml jus lie and finish with a little creme fraiche, yogurt or cream.
  • Place 2 soft-boiled eggs per portion on a blinis, coat with the sauce and serve.
