  • 4 Medium trout cleaned and with the eyes removed
  • Salt and pepper to taste
  • 2 Garlic cloves halved
  • 4 Rosemary sprays
  • 3 Tbs Olive oil
  • 1 Lemon cut into 8 wedges


  • Preheat the grill (broiler) to moderate.
  • Place the fish on a flat surface and rub them all over with salt and pepper.
  • Put half a garlic clove and a rosemary spray in the cavity of each fish.
  • Make three shallow cuts on each side and arrange the trout in the lined grill (broiler) pan.
  • Lightly coat the fish with the oil, then grill (broil) the fish for 5 minutes. Remove the pan from the heat and turn the fish over. Brush with the remaining oil and grill (broil) for a further 5 to 6 minutes, or until the flesh flakes easily.
  • Transfer to a warmed serving dish and remove the garlic and rosemary. Garnish with lemon wedges and serve at once.
