Greek Courgettes with Tomato and Dill
Ingredients
- 3 1/2 oz chopped onion
- 2 crushed cloves of garlic
- 2 floz olive oil
- 8 oz tomato concass©e
- 1 oz chopped dill
- 1 oz chopped mint
- 10 small courgettes
Instructions
- Sweat 3 1/2 oz chopped onion and 2 crushed cloves of garlic in 2 floz olive oil, add 8 oz tomato concassée, 1 oz chopped dill and 1 oz chopped mint; season and cook for 5 minutes.
- Add 10 small courgettes cut into 0.5 cm slices and moisten with a little water, season with salt and simmer for 10 minutes.
- Allow to stand until cool then serve dome-shape in a vegetable dish. This dish may also be served warm.
