Ingredients
 

  • 3 1/2 oz chopped onion
  • 2 crushed cloves of garlic
  • 2 floz olive oil
  • 8 oz tomato concass©e
  • 1 oz chopped dill
  • 1 oz chopped mint
  • 10 small courgettes

Instructions

  • Sweat 3 1/2 oz chopped onion and 2 crushed cloves of garlic in 2 floz olive oil, add 8 oz tomato concassée, 1 oz chopped dill and 1 oz chopped mint; season and cook for 5 minutes.
  • Add 10 small courgettes cut into 0.5 cm slices and moisten with a little water, season with salt and simmer for 10 minutes.
  • Allow to stand until cool then serve dome-shape in a vegetable dish. This dish may also be served warm.
