Peach Tart
Ingredients
- 2 oz self-raising flour
- pinch of baking powder
- 2 eggs
- milk to make a batter
- 1 egg white whisked to soft peaks
for the peaches
- 1 oz unsalted butter
- 2 tsp caster sugar
- 2 peaches cut in half and stone removed
Instructions
- Preheat the oven to 220°C (425°F) Gas 7.
- Place the flour, baking powder and eggs into a bowl and mix together. Whisk in enough milk to make a thick smooth batter, the consistency of double cream.
- Fold in the egg white to combine.
- Gently melt the butter and sugar in a small non-stick frying pan. Pan-fry the peach halves for 2 - 3 minutes on each side.
- Pour the batter mixture over the peaches and then bake in the oven for 8-10 minutes, or until springy to the touch and golden brown.
- Remove from the oven, turn out onto a serving plate and serve.
