  • 2 oz self-raising flour
  • pinch of baking powder
  • 2 eggs
  • milk to make a batter
  • 1 egg white whisked to soft peaks

for the peaches

  • 1 oz unsalted butter
  • 2 tsp caster sugar
  • 2 peaches cut in half and stone removed


  • Preheat the oven to 220°C (425°F) Gas 7.
  • Place the flour, baking powder and eggs into a bowl and mix together. Whisk in enough milk to make a thick smooth batter, the consistency of double cream.
  • Fold in the egg white to combine.
  • Gently melt the butter and sugar in a small non-stick frying pan. Pan-fry the peach halves for 2 - 3 minutes on each side.
  • Pour the batter mixture over the peaches and then bake in the oven for 8-10 minutes, or until springy to the touch and golden brown.
  • Remove from the oven, turn out onto a serving plate and serve.
