Grated Carrot Salad (Carottes Rapees)
Ingredients
- 1 lb Carrots
for the dressing
- 3 Tbs Olive oil
- 1 1/2 Tbs White wine vinegar
- 1 tsp Lemon juice
- 1/2 tsp Salt and pepper to taste Sugar
Instructions
- First make the dressing. Put all the ingredients into a screw-topped jar and shake vigorously.
- Grate the carrots into a shallow salad bowl. Pour over the dressing and, using two large spoons, carefully toss to blend thoroughly.
- Cover and chill before serving.
