  • 1 lb Carrots

for the dressing

  • 3 Tbs Olive oil
  • 1 1/2 Tbs White wine vinegar
  • 1 tsp Lemon juice
  • 1/2 tsp Salt and pepper to taste Sugar


  • First make the dressing. Put all the ingredients into a screw-topped jar and shake vigorously.
  • Grate the carrots into a shallow salad bowl. Pour over the dressing and, using two large spoons, carefully toss to blend thoroughly.
  • Cover and chill before serving.
