Grated Potato Pancakes
These potato pancakes are great for weekend breakfasts or as a side to your favorite soup.
Ingredients
- 2 lb potatoes
- 1 small onion
- 2 medium eggs beaten
- 3 tbsp flour
- 1/4 tsp ground nutmeg
- 1/4 tsp ground pepper
- 1 tsp salt
- 1/2 tsp baking powder
- Butter or margarine for cooking
- Parsley for garnish
Instructions
- Peel and finely grate the raw potatoes and onion into a bowl and leave to stand for 10 minutes.
- Drain off any liquid which collects in the bowl.
- Add the eggs and all the other ingredients, except the butter and parsley, to the bowl and beat well until smooth.
- Melt the butter in a heavy frying pan and, when hot, drop spoonfuls of the batter into the hot butter and cook for about 3 minutes.
- Turn the pancakes and cook on the other side for a further 2 - 3 minutes until golden brown.
- Drain well on kitchen paper.
- Serve garnished with parsley.
