Ingredients
 

  • 1 onion
  • 3 rashers streaky bacon
  • 4 oz celeriac
  • 1 carrot
  • 2 tbsp oil
  • 2 cloves garlic crushed
  • 1 lb lean minced beef
  • 3 tbsp tomato puree
  • 14 oz can tomatoes
  • salt and pepper
  • 1/4 pt beef stock
  • 12 oz pasta

Instructions

  • Chop onion and bacon. Dice celeriac and carrot.
  • Heat oil in a large frying pan or saucepan. Ada onion and garlic and fry for 3 mins.
  • Add bacon, fry for 3 mins. Add celeriac and carrot and cook for 2 mins.
  • Add mince and cook for 3 - 4 mins, until brown.
  • Add tomato puree, tomatoes, seasoning and stock and stir well Bring to boil, cover and simmer for 30 mins.
  • Cook pasta in lightly salted boiling water for 10 - 12 mins or until just tender. Drain, top with sauce and serve.
  • Celeriac is the root of a type of celery. Replace with 2 sticks of celery if preferred.
