  • 10 1/2 oz carrots
  • 3 tbsp French dressing
  • 2 oranges

for the garnish

  • Watercress salad cress sprigs


  • Scrape the carrots and grate finely.
  • Pour over the dressing and toss lightly.
  • Peel the oranges, discarding all the white pith, and cut into slices.
  • Pile the grated carrot into the centre of a serving dish.
  • Arrange the orange slices round the edge and garnish with watercress sprigs before serving.
