Fish Curry
Fish curry is a dish made with fish, cooked in a spicy, onion-based curry.
Ingredients
- 1 oz soft margarine
- 1 onion chopped
- 1/2 green pepper seeded and chopped
- 1 carrot thinly sliced
- 3 teaspoons curry powder
- 1 tablespoon plain flour
- 1/2 pint stock
- 1 teaspoon lemon juice
- 1 small apple peeled, cored and chopped
- 1 tablespoon sultanas
- 1 1/4 lb haddock fillets cut into cubes
- salt and pepper
- chopped parsley to garnish
Instructions
- Melt the margarine in a pan and fry the onion, pepper, carrot and curry powder for 5 minutes. Stir in the flour and cook for 1 minute.
- Gradually blend in the stock and lemon juice. Heat, stirring until the sauce thickens.
- Add the apple, sultanas and haddock, then season to taste with salt and pepper. Cover and simmer for 20 - 25 minutes.
- Transfer to a hot serving dish and garnish with the chopped parsley.
- The amount of curry powder depends on your personal taste and on the type you are using. This curry should not be too fiery. Serve it with some
- brown rice which has a nutty texture.
