Fish curry is a dish made with fish, cooked in a spicy, onion-based curry.

  • 1 oz soft margarine
  • 1 onion chopped
  • 1/2 green pepper seeded and chopped
  • 1 carrot thinly sliced
  • 3 teaspoons curry powder
  • 1 tablespoon plain flour
  • 1/2 pint stock
  • 1 teaspoon lemon juice
  • 1 small apple peeled, cored and chopped
  • 1 tablespoon sultanas
  • 1 1/4 lb haddock fillets cut into cubes
  • salt and pepper
  • chopped parsley to garnish


  • Melt the margarine in a pan and fry the onion, pepper, carrot and curry powder for 5 minutes. Stir in the flour and cook for 1 minute.
  • Gradually blend in the stock and lemon juice. Heat, stirring until the sauce thickens.
  • Add the apple, sultanas and haddock, then season to taste with salt and pepper. Cover and simmer for 20 - 25 minutes.
  • Transfer to a hot serving dish and garnish with the chopped parsley.
