The sweetness of the apples in this recipe mingles with the spiciness of a traditional Indian vegetable curry. Serve with rice and a simple green salad.

  • 1 large onion
  • 6 oz swede
  • 6 oz carrot
  • 6 oz parsnip
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon chilli powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin seeds
  • 6 oz cauliflower
  • 2 Granny Smith apples
  • 1/2 oz butter
  • 1/2 teaspoon sugar
  • Fresh coriander for garnish


  • Peel and finely chop the onion. Peel and roughly dice the swede, carrot and parsnip. Cook the vegetables in the oil in a large pan over a medium heat for 6 minutes, stirring frequently.
  • Add the spices and 1/2 pint (285 ml) water and simmer for 15 minutes. Cut the cauliflower into florets and stir into the pan. Cover and simmer for a further 20 minutes.
  • Peel, core and roughly chop the apples. Cook over a medium heat for 4 minutes, add the sugar and stir into the curry. Garnish with coriander and serve.
