
Apple, Coriander and Vegetable Curry
The sweetness of the apples in this recipe mingles with the spiciness of a traditional Indian vegetable curry. Serve with rice and a simple green salad.
Ingredients
- 1 large onion
- 6 oz swede
- 6 oz carrot
- 6 oz parsnip
- 2 tablespoons vegetable oil
- 1/2 teaspoon chilli powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon turmeric
- 1/2 teaspoon cumin seeds
- 6 oz cauliflower
- 2 Granny Smith apples
- 1/2 oz butter
- 1/2 teaspoon sugar
- Fresh coriander for garnish
Instructions
- Peel and finely chop the onion. Peel and roughly dice the swede, carrot and parsnip. Cook the vegetables in the oil in a large pan over a medium heat for 6 minutes, stirring frequently.
- Add the spices and 1/2 pint (285 ml) water and simmer for 15 minutes. Cut the cauliflower into florets and stir into the pan. Cover and simmer for a further 20 minutes.
- Peel, core and roughly chop the apples. Cook over a medium heat for 4 minutes, add the sugar and stir into the curry. Garnish with coriander and serve.
