  • 8 frozen fillets of Dover sole
  • 3 tbsp herb butter
  • salt
  • lemon juice
  • 1 onion
  • 1 clove of garlic
  • 2 tbsp butter
  • 1 small piece ginger
  • pepper
  • 1/2 pint rice wine
  • 2 tbsp soy sauce
  • 3 1/2 floz creme fraiche
  • herbs for decoration


  • Wash and dry the Dover sole fillets. Melt the herb butter in a frying pan and saute the fish. Season with salt and lemon juice.
  • Peel and dice the onion. Peel and crush the clove of garlic. Melt the butter in a frying pan and saute the onions and garlic.
  • Peel the ginger, grate and add to the onions. Season with salt and pepper. Add the rice wine and soy sauce. Simmer on a gentle heat for approximately 5 minutes.
  • Stir in the creme fraiche. Arrange the Dover sole fillets and sauce on plates and decorate with herbs. Green fettuccine taste great with this dish.
