
Dover Sole In Ginger Cream
Ingredients
- 8 frozen fillets of Dover sole
- 3 tbsp herb butter
- salt
- lemon juice
- 1 onion
- 1 clove of garlic
- 2 tbsp butter
- 1 small piece ginger
- pepper
- 1/2 pint rice wine
- 2 tbsp soy sauce
- 3 1/2 floz creme fraiche
- herbs for decoration
Instructions
- Wash and dry the Dover sole fillets. Melt the herb butter in a frying pan and saute the fish. Season with salt and lemon juice.
- Peel and dice the onion. Peel and crush the clove of garlic. Melt the butter in a frying pan and saute the onions and garlic.
- Peel the ginger, grate and add to the onions. Season with salt and pepper. Add the rice wine and soy sauce. Simmer on a gentle heat for approximately 5 minutes.
- Stir in the creme fraiche. Arrange the Dover sole fillets and sauce on plates and decorate with herbs. Green fettuccine taste great with this dish.
