Curried Chicken Baps are a simple yet delicious flavor-packed dinner or lunch dish. Serve them with a side of cauliflower rice or some greens for a complete meal.

Ingredients
 

  • 10 oz cooked chicken
  • 4 wholemeal baps
  • 1/4 Iceberg lettuce

Dressing

  • 1 1/2 teaspoons garam masala
  • 1/2 teaspoon curry powder
  • 2 teaspoons lemon juice
  • 1 tablespoon strained Greek yoghurt
  • 1 tablespoon low-calorie mayonnaise

Instructions

  • Wash and thoroughly dry the lettuce and cut it into shreds using a sharp knife. Dice the chicken into 1/2 inch (15mm) cubes and stir it in with all the ingredients for the dressing in a mixing bowl.
  • Without cutting right through, cut the baps in half and open them out. Sandwich the curried chicken mixture in between 2 layers of lettuce and close the baps. Serve, or wrap well to keep fresh.
