
Curried Chicken Baps
Curried Chicken Baps are a simple yet delicious flavor-packed dinner or lunch dish. Serve them with a side of cauliflower rice or some greens for a complete meal.
Ingredients
- 10 oz cooked chicken
- 4 wholemeal baps
- 1/4 Iceberg lettuce
Dressing
- 1 1/2 teaspoons garam masala
- 1/2 teaspoon curry powder
- 2 teaspoons lemon juice
- 1 tablespoon strained Greek yoghurt
- 1 tablespoon low-calorie mayonnaise
Instructions
- Wash and thoroughly dry the lettuce and cut it into shreds using a sharp knife. Dice the chicken into 1/2 inch (15mm) cubes and stir it in with all the ingredients for the dressing in a mixing bowl.
- Without cutting right through, cut the baps in half and open them out. Sandwich the curried chicken mixture in between 2 layers of lettuce and close the baps. Serve, or wrap well to keep fresh.
