Creme Du Barry is a potato and cauliflower soup with croutons.

  • 8 oz potatoes
  • 1 lb cauliflower florets
  • 32 floz water
  • 1/2 tsp grated nutmeg
  • 15 floz milk
  • salt and freshly ground black pepper
  • 1 oz butter
  • croutons for garnish


  • Peel and dice potatoes and put in a large saucepan.
  • Add the cauliflower florets and water.
  • Cover, bring to a simmer and cook for 30 minutes.
  • Liquidise or rub through a sieve.
  • Return to saucepan and add the nutmeg, milk, salt, pepper and butter.
  • Reheat thoroughly and serve garnished with croutons, cubes of toasted or deep fried bread.
