  • 1 medium cucumber
  • 1 onion
  • 1 stem dill
  • 1 tablespoon chopped borage
  • 1/2 teaspoon salt and freshly milled white pepper
  • 1 tablespoon lemon juice
  • 1 teaspoon maple syrup
  • 1/4 pint full-milk natural yogurt


  • Wash and dry the cucumber, halve it lengthways and then cut it into sticks about 1 cm (1/2 in) thick. Cut the onion into thin rings and cut each ring into four. Wash the dill, shake dry and chop.
  • Beat the dill and the other seasonings into the yogurt and fold the dressing into the cucumber and onion.
  • Leave the salad to stand for 10 minutes before serving.
