
Cucumber Salad with Yogurt Dressing
Ingredients
- 1 medium cucumber
- 1 onion
- 1 stem dill
- 1 tablespoon chopped borage
- 1/2 teaspoon salt and freshly milled white pepper
- 1 tablespoon lemon juice
- 1 teaspoon maple syrup
- 1/4 pint full-milk natural yogurt
Instructions
- Wash and dry the cucumber, halve it lengthways and then cut it into sticks about 1 cm (1/2 in) thick. Cut the onion into thin rings and cut each ring into four. Wash the dill, shake dry and chop.
- Beat the dill and the other seasonings into the yogurt and fold the dressing into the cucumber and onion.
- Leave the salad to stand for 10 minutes before serving.
