  • 1 large cucumber
  • 1 tsp salt
  • 3 tbsp French dressing
  • 1 tbsp chopped parsley
  • 1 tsp chopped tarragon


  • Slice the cucumber thinly and salt it. Rinse and place in a serving dish.
  • Pour over the dressing and sprinkle with the herbs before serving.
  • Note To salt cucumber, slice thinly and place in a large colander. Sprinkle over 1 tsp salt and leave for 30—40 minutes to drain. Remove, pat dry and use as required.
