  • 4 boned and unskinned chicken breasts
  • 2 limes
  • 1 oz fresh peeled ginger
  • 1 tablespoon runny honey
  • 1 tablespoon soy sauce
  • salt and freshly ground black pepper


  • Put the chicken breasts into a glass or china bowl (not a metal one).
  • Squeeze the limes and pour the juice over the chicken.
  • Add the honey and the soy sauce. Grate the ginger and spread it over the chicken and leave to marinate in the fridge as long as possible - anything from 1 to 12 hours. Turn a couple of times.
  • Heat the grill until it is really hot. Put the chicken under it, skin side up. Grill for 4-5 minutes, then turn over, season, and grill for another 6 or 7 minutes.
  • If you have to, turn the heat down slightly, but make sure the chicken is cooked all the way through.
  • Meanwhile, put the marinade into a saucepan, bring to the boil and let it bubble for a few minutes.
  • Pour it over the chicken just before you serve with rice or mashed potatoes
