  • 2 tbsp vegetable oil
  • 2 chicken breasts skinned and boned
  • 4 oz broccoli florets
  • 1 carrot thinly sliced
  • 4 oz mange tout
  • 2 spring onions thinly sliced
  • 1 tbsp soy sauce


  • Heat the oil in a wok or heavy frying pan until smoking. Cut the chicken into strips and stir fry for 2 minutes.
  • Remove with a slotted spoon and keep warm, add the broccoli and carrot and cook for a further minute.
  • Add the mange tout and soy sauce. Return the chicken. Toss well.
  • Serve immediately with egg noodles.
