Leek and Broccoli Sauce
Peel the outer skin from the broad beans for a bright green colour.
Ingredients
- 4 oz quark
- 3 tbsps double cream
- 2 tbsp chopped watercress
- 1 tbsp fresh chopped parsley
- 2 oz butter
- 2 large leeks trimmed and sliced
- 8 oz broccoli broken into tiny florets, steamed
- 8 oz frozen broad beans thawed
Instructions
- Mash the quark with the cream and stir in the watercress, parsley and seasoning.
- Melt the butter in a frying pan and fry the leeks until soft. Add the broccoli, cook for 2 minutes.
- Then add the broad beans and fry, stirring, for 1 minute. Stir in the quark mixture.
- Serve with freshly boiled pasta.
