  • 1 celery heart
  • scant 1/2 us cup mayonnaise
  • 1 small lettuce
  • 8 3/4 oz cooked chestnuts
  • 1 eating apple


  • Halve or quarter the chestnuts.
  • Use 1 stick of celery to make celery curls (p67).
  • Chop the rest finely.
  • Quarter, core, and dice the apple, and mix quickly with the mayonnaise to preserve the colour.
  • Add the chestnuts and celery and toss lightly.
  • Wash the lettuce, dry thoroughly, and place round the edge of a salad bowl.
  • Pile the chestnut mixture into the centre and garnish with the celery curls before serving.
