Celery and Chestnut Salad
Ingredients
- 1 celery heart
- scant 1/2 us cup mayonnaise
- 1 small lettuce
- 8 3/4 oz cooked chestnuts
- 1 eating apple
Instructions
- Halve or quarter the chestnuts.
- Use 1 stick of celery to make celery curls (p67).
- Chop the rest finely.
- Quarter, core, and dice the apple, and mix quickly with the mayonnaise to preserve the colour.
- Add the chestnuts and celery and toss lightly.
- Wash the lettuce, dry thoroughly, and place round the edge of a salad bowl.
- Pile the chestnut mixture into the centre and garnish with the celery curls before serving.
